Working entirely by hand and with minimal intervention in the cellar, his wines combine the depth and savoury character of Cornas with remarkable perfume, purity and finesse.
The 2020 Chaillot is 100% Syrah, showing blackberry and cassis layered with violets, cracked pepper, smoked herbs and graphite. Deep and concentrated yet beautifully energetic, fine tannins and a rocky mineral edge bring freshness and precision through a long, savoury finish.
