At 95% cacao, this bar represents one of Amedei’s most technically ambitious bars.

Rather than rely on cane sugar, Amedei made a radical choice - to replace sugar entirely and use pure maple sugar, derived from Canadian maple sap.

The result is not simple sweetness, but a layered, aromatic softness that tempers intensity and allows the cacao itself to remain firmly in focus - even at such an high percentage.

Emerging from that is an exceptionally elegant chocolate: deep and assertive, yet polished and sweet, with notes of liquorice, spice, and wild citrus unfolding gradually rather than aggressively.
