And it's a family treasure as this is a special bar!
Nove is the Italian word for nine, and this bar is an expertly blended - and closely guarded - combination of nine different beans. And blending nine cacaos into one exceptional bar is extraordinarily hard - each origin has to add its voice without drowning out the others. Get it wrong and the bar is muddled noise; get it right, and you have something like Nove. Blending is a skill!
The result - a bar that is powerful but composed: bright citrus and precious woods at the front, sweet roasted almond through the middle, and a long warm finish that lingers like fine hot chocolate. The melt is creamy and unhurried.
A two-time Golden Bean winner at London's Academy of Chocolate (2009 and 2011) - chocolate's equivalent of an Oscar, by Amedei's own reckoning.
Whispers in the chocolate world hint at Chuao and Porcelana hiding among the nine beans in this bar, however given how vanishingly rare those beans are, we wouldn't bet the farm on it. Amedei aren't telling, and honestly, that's half the fun.
