Applications in Distillation and Compounding

For distillers, the tea cut offers a distinct advantage over whole flowers. The increased surface area allows for a faster, more consistent infusion without the clumping often found with powders.

  • Post-Distillation Maceration: To retain the color, we recommend macerating the tea cut in your finished spirit post-distillation. The color-giving compounds are delicate; high-heat distillation will strip the color, leaving only a subtle, earthy sweetness.

  • Flavor Profile: While primarily used for color, it contributes a light, herbaceous, and "woody" base note—reminiscent of fine green tea—that complements juniper, citrus, and coriander perfectly.

How to Create the Perfect "Color-Change" Gin

  1. Infuse: Add approximately 5g–10g of tea cut per liter of finished gin (adjust based on desired intensity).

  2. Monitor: Macerate for 24–48 hours. The tea cut ensures a rapid "bleed" of color for a uniform batch.

  3. Filter: Fine-filter the spirit to remove the botanical particulates.

  4. The Reveal: Bottle your "Blue Gin." When your customers serve it with tonic, they’ll witness the signature shift to bright purple or pink right in the glass.

Tea Brewing Instructions:

Add 1 heaped tsp per cup, add boiling water and let brew for 1-3 mins or longer if preferred. Great also served iced. Add a tsp of honey and a squeeze of lemon for the traditional Thai tea experience!

Handy Tip: Add some lemon juice and watch it change to a delightful pink/purple colour!
