Nashua Washed Rind

One of the trailblazers of Australian washed rind cheese — and it still holds its own. Made by Nimbin Valley Dairy in the lush hinterland of northern NSW, Nashua is often compared to the French Époisses, with a smooth, increasingly creamy paste and that unmistakable pungent kick that washed rinds are famous for. Leave it in the fridge long enough and it will tell you when it's ready.

Bold enough to stand up to a full-bodied red, port, or even a whisky. Serve with simple crackers or sourdough and let it do the talking.
